If you really like Eggplant, you can put it in the center. When it has lots of sunshine and space, it grow and produce good fruitssssss. Otherwise, you can place it at the conner near sunflower and watermelon, then your amaranth can enjoy more sunshine.
Since sunflowers have only one majoy stem, Eggplant can still have some space to grow. Tomatoes keen to spread out and might block Eggplant after the first month.

What about putting the eggplant to the corner just next to cherry tomatoes and cucumbers?
